Recipe Exchange
Good evening! I received an email from my Aunt Tammi that I receive several of a year--RECIPE EXCHANGES! I love them! I actually started a digital cookbook because of the recipes that I received through these exchanges. I since have typed up a lot of my recipes in addition to the great ones shared by many friends! Thank you to those who have shared. Below is my favorite Enchilada soup. It is really good & very quick and easy...enjoy!
Enchilada Chicken Soup
1 can (11 oz.) condensed fiesta nacho cheese soup, undiluted
1 can (10 ¾ oz.) condensed cream of chicken soup, undiluted
2 2/3 cups milk
1 can (10 oz.) chunk white chicken, drained (I just use cooked chicken)
1 can (10 oz.) enchilada sauce
1 can (4 oz.) chopped green chilies
Sour cream
In a large saucepan, combine the soups, milk, chicken, enchilada sauce and chilies; mix well. Cook until heated through. Garnish with sour cream. Yields 7 servings.
I also top with shredded cheddar cheese. This makes a great dip too!
